Shunei Kimura has been living in Paris for forty years now. An undeniably talented sushiya, Kimura-san began the Sushi Shunei adventure with a months-long visit to Japan to study the latest techniques in Tokyo’s best sushi restaurants, including Michelin-starred ones. At 64, Chef Kimura was not afraid of anything - and especially not of learning everything again.

Now established in his restaurant, Shunei Kimura wants to convey his love of sushi to his guests. Dressed in his traditional uniform behind his counter, Chef Kimura seems to smile little - but regulars will quickly discover his playfulness.

At 64, Chef Kimura was not afraid of anything - and especially not of learning everything again.

Now established in his restaurant, Shunei Kimura wants to convey his love of sushi to his guests. Dressed in his traditional uniform behind his counter, Chef Kimura seems to smile little - but regulars will quickly discover his playfulness.

The Experience

On the lacquer platter, custom-designed by artisans in Kanazawa for the restaurant - like all the ceramics that were specially commissioned in Kyoto - the chef places his nigiris one after the other. The typically Japanese rigor mingles with indulgence when the rice, simple and carefully balanced, supports with its texture, temperature and subtle taste a tuna so fatty that it melts in your mouth. The sushis are paired according to the wishes of each person with a selection of sakes or precisely infused teas - and often cold-brewed to fully exacerbate their umami - or organic wines selected from several hundred references for the perfection of their harmony, so difficult to achieve, with raw fish, itself carefully sourced by the chef from the best suppliers and fishermen, whom he has met.

More than a restaurant, more than an experience, Sushi Shunei is an emotion. As such, it is difficult to describe with words - you have to live it. We are waiting for you.

Book a table

Information

Sushi Shunei is open for dinner, from Tuesday to Saturday, by reservation only for our two services at 7pm and 9:30pm. The experience lasts just under two hours, and in pure Japanese tradition, we ask you to arrive on time. If you are late for more than 15 minutes, we will not be able to serve you your entire menu. We respectfully ask the guests of our first service to leave their seats before 9pm.

In case of any allergy or food restriction, please let us know so that we can adapt your menu. Unfortunately, if you are allergic to all seafood, we will not be able to accommodate you.

For any reservation, please use our online reservation system, accessible by clicking on the "Book" button located at the top right of this page. In order to book at the counter, please select "Le Comptoir" after having chosen a time. If it doesn't appear, it means the counter is already full.

A credit card imprint is required for every reservation: our restaurant has a very limited number of seats and purchases are made according to the number of guests in order to offer you the best ingredients in the best possible conditions. You can modify or cancel your reservation up to 48 hours before your reservation. Within 48 hours of your booking, there is a penalty of 100 euros per person, and it can not be waived, even in case of COVID-19. Thank you for your understanding.
