
Located in Montmartre, in a setting specially crafted for chef Shunei Kimura by the architectural firms Sala Hars and Vorbot, Sushi Shunei is a sushiya positioned at the intersection of Japanese tradition and the creative freedom allowed by its Parisian setting. We respect the fundamental rules of edomae sushi: in Japan, sushi is almost never eaten anywhere other than at the counter in front of the chef - the same is true at Sushi Shunei, where the hinoki counter, carved from a single 7-meter-long knot-free piece, would be considered exceptional even in Japan. In this minimalist and undeniably mysterious place, the light that emanates peacefully from the ceiling illuminates pure wood panels to form an origami that explains the feeling of timelessness sensed by all who enter it.

Chefs Chizuko Kimura and Takeshi Morooka officiate behind the counter at Sushi Shunei. Chizuko Kimura, widow of the restaurant's founder, Shunei Kimura, continues her husband's dream with unwavering determination. Alongside her, the talented and renowned chef Takeshi Morooka, with 30 years of experience in the art of sushi, brings to Sushi Shunei a unique rigor and a perpetual obsession to serve the most traditional sushi possible. Formerly the chef of the highly regarded Ginza Onodera, Takeshi Morooka has also trained many chefs in Japan as an instructor. Together, their collaboration led to the regaining of the Michelin star in March 2025, initially awarded to Shunei in 2022 and lost in 2023 following his passing.

On the lacquer platter, custom-designed by artisans in Kanazawa for the restaurant - like all the ceramics carefully sourced in Kyoto - the chefs place their nigiri one after the other. The typically Japanese rigor mingles with indulgence when the rice, simple and carefully balanced, supports with its texture, temperature, and subtle taste a tuna so fatty that it melts in your mouth. The sushi is paired according to each guest's wishes with a selection of sakes or precisely infused teas - often cold-brewed to fully enhance their umami - or organic wines selected from several hundred references for the perfection of their harmony, so difficult to achieve, with raw fish, itself meticulously sourced by the chefs from the best suppliers and fishermen, whom they have personally met.
