Shunei Kimura (1956-2022)

Sushi Shunei was created for Shunei Kimura, who lived in Paris for over forty years. An undeniably talented sushiya, Shunei very sadly passed away in June 2022, only 3 months after obtaining his first star in the Michelin Guide. Shunei will forever be in our memory.

Sushi Shunei was a man's dream, and before leaving us, Shunei asked his wife Chizuko Kimura to continue the adventure. It is in his honor that she keeps her promise to him every day to maintain the restaurant open.

The Chefs

Alongside Chizuko Kimura, the talented and renowned chef Takeshi Morooka officiates behind the counter. With 30 years of experience in the art of sushi, he brings to Sushi Shunei a unique rigor and a perpetual obsession to serve the most traditional sushi possible. Formerly the chef of the highly regarded Ginza Onodera, Takeshi Morooka has also trained many chefs in Japan as an instructor. His mastery of sushi is unmatched in Paris.

The Experience

On the lacquer platter, custom-designed by artisans in Kanazawa for the restaurant - like all the ceramics that were specially commissioned in Kyoto - the chef places his nigiris one after the other. The typically Japanese rigor mingles with indulgence when the rice, simple and carefully balanced, supports with its texture, temperature and subtle taste a tuna so fatty that it melts in your mouth. The sushis are paired according to the wishes of each person with a selection of sakes or precisely infused teas - and often cold-brewed to fully exacerbate their umami - or organic wines selected from several hundred references for the perfection of their harmony, so difficult to achieve, with raw fish, itself carefully sourced by the chefs from the best suppliers and fishermen, whom they have met.

More than a restaurant, more than an experience, Sushi Shunei is an emotion. As such, it is difficult to describe with words - you have to live it. We are waiting for you.

Book a table

Information

Sushi Shunei is open for dinner, from Tuesday to Saturday, by reservation only for our two services at 7pm and 9:30pm, as well as on Saturdays at lunchtime. The experience lasts just under two hours, and in pure Japanese tradition, we ask you to arrive on time. If you are late for more than 15 minutes, we will not be able to serve you your entire menu. We respectfully ask the guests of our first service to leave their seats by 9:15pm.
